“Blanc de Noir” literally means white from black — a sparkling wine made from red grapes, gently pressed to extract only the palest juice. In our case, 100% Pinot Noir.
The result? Fine, persistent bead with subtle brioche and almond from time on lees and a creamy texture balanced with vibrant natural acidity. It’s refined without being showy. Elegant without being restrained.
Our vineyard sits in the cool-climate region of the King Valley — long ripening periods, crisp evenings and pristine alpine air create natural acidity and flavour concentration that sparkling wine thrives on.
Every bottle boasts hand-harvested fruit, Traditional method wine making- Aged patiently on lees until the time is right, and more importantly produced in small batches
This is sparkling made with intention.
We are incredibly honoured that our Blanc de Noir has been featured in the Young Gun of Wine editorial — a respected platform highlighting Australia’s most exciting, quality-driven producers, as the WINNER in this category.
We also placed in the top 6 with our gorgeous blush coloured Pinot Meunière. "A superbly soft palate, driven by strawberry fruit character – reminiscent of French tartelettes aux fraises, with some nice toasted notes." Étienne Mangier, winemaker, North by Étienne Mangier.
